My exercise regime is in overdrive with all this food - Roz


We're used to seeing her cook up a storm, but model Roz Purcell admits that even she has to hit the gym to make up for it.

The former Miss Universe Ireland (right) has reinvented herself as a foodie over the past few months with the success of her blog Natural Born Feeder.

She is also working on her own cook book which will be published by Gill & Macmillan in the coming months.

If she's not in her own kitchen coming up with delicious healthy meals, Roz is down at Mooch on Dawson Street where some of her recipes are on the menu.

"People always ask how I cook so much and keep trim but I train all the time and I have to do a lot more of it now because I always make sure to test everything myself," she told the Diary.

"I would never put up a recipe on my website without tasting it myself, that's such an important part of cooking for me.

"Other people say that they make things and they have tasters who come to try the dishes so that they don't have to eat it, but I could never do that," she added.


The 24-year-old has trained for triathlons in the past and she's currently preparing for the Skoda Ring of Kerry Charity Cycle.

"I usually do the Skoda cycling series every year but it's tough because there's usually seven or eight of them," she said.

"The Ring of Kerry - which is about 180km - is up next and there's the tour of Connemara as well so there's a few tough ones.

"It seems like the cold, wet weather continued a lot longer than usual and I haven't been out on the bike as much, so I'm really feeling the pressure now."

Roz is used to appearing in front of the cameras, on both modelling jobs and doing cooking demos on Ireland AM and Xpose, and now she's using those skills to shoot short videos for those interested in taking part in the cycle.

"I'm quite involved this year, I changed it up doing a few videos about how to prep and making your own homemade bars and things like that.

"Then other ones are about your bike and prepping your gear for the cycle - things that I'm useless for," she laughed.
