Zesty salmon dish

Grilled Salmon with Citrus Tomato Salsa

Preparation time: 15 minutes

Cooking time: 15 minutes

2 medium tomatoes, chopped

2 large oranges, peeled, segmented and chopped

100g spring onions, sliced

6 tbsp chopped, fresh coriander

2 tsp seeded jalapeno peppers (optional), finely chopped

55g Flora

6 salmon fillets (about 750g or 1½ lbs)


To make the salsa, combine tomatoes, oranges, spring onions, 4 tbsp of the coriander and the jalapeno peppers in a large bowl and set aside.

Blend Flora with the remaining 2 tbsp of the coriander in a small bowl.

Brush the salmon with the Flora and coriander spread and grill for 15 minutes or until salmon is done.

Serve salsa with salmon.
