Asian Mackerel Salad

Asian mackerel salad / Serves 4

A delicious and extremely healthy recipe


4 smoked peppered mackerels

2 tbsp teriyaki marinade

Bunch onions/spring onions,

200g basmati rice

1 cucumber, halved, deseeded and sliced

100g baby spinach leaves

Large handful of beansprouts

2 red/green chillies, finely chopped

2 tsp sugar

2 tbsp rice or white wine vinegar


Place the mackerel into a shallow dish, pour over the marinade, add half the onions/spring onions and place to one side.

Put the rice in a pan, cover with a small amount of water, season with salt, then bring to the boil. Turn down heat, stir and cover; simmer for 10 minutes until all of the water has disappeared. Remove off the heat, cover and leave to steam for five minutes.

In a bowl, mix the cucumber with the rest of the onions/spring onions, spinach leaves, beansprouts and chillies.

To make a dressing, mix the sugar and vinegar.

Remove the fish from the marinade and place on four plates, drizzling some marinade from the fish.

Toss the salad with the dressing and serve alongside fish and some basmati rice
