Harissa flavoured lamb burgers with tzatziki

INGREDIENTS

l 1 large onion, finely chopped

l Groundnut oil

l 2 cloves garlic, finely chopped

l 1 tbsp fresh root ginger, grated

l 1 tsp ground cumin

l 1 tsp ground coriander

l 1 fresh chilli, chopped

l 3-4 cardamom pods, seeded and crushed

l 1 tsp turmeric

l 1kg shoulder of lamb, well trimmed and diced

l 125ml Greek natural yoghurt, mixed with 1 tsp cornflour

l 225g mushrooms, sliced

l 1 tbsp lemon/lime juice

l Salt and black pepper
