Dinner dash: Prawn chow mein

Prawn chow mein / Serves 4

A quick, simple and healthy Asian treat you can whip up tonight


5 servings of medium egg noodles

150g broccoli, chopped into small florets

150g baby corn, halved

3 carrots, cut into thin sticks

1 onion sliced

Handful of mangetouts

1 tbsp olive oil

1 red pepper, sliced

300g prawns

Soy sauce

For the sauce:

3 tbsp tomato ketchup

2 tbsp oyster sauce


In a pan of boiling water, cook the noodles, broccoli, corn, mangetouts and carrot for 3-4 minutes, or until tender. Drain and set to one side.

In a large frying pan or wok, heat the oil and fry the onion and pepper until it starts to soften, for about three minutes. Add in the noodles and veg, along with the prawns, and toss together. Add the sauce ingredients and heat everything through for 2-3 minutes, until piping hot.

Splash with some soy sauce before serving.
