I'll have my own wedding cake and eat it – Rosanna

After months going through 'bridal boot camp' to fit into their perfect dress, most brides tend to indulge on their Big Day.

But not model Rosanna Davison, who is getting a special vegan-friendly wedding cake made.

"I have made inquiries about the wedding cake – you can get ones specially made which have two normal layers and one vegan tier. So I would have the top tier of the cake all to myself," the 28-year-old laughed.

However, husband-to-be Wes Quirke isn't quite so keen on the idea.



"Wes is a complete carnivore. I'm trying to convert him, but he loves meat"

Wes even suggested they treat wedding guests to a medieval-style hog roast.

"He said a while ago that he wanted a pig on a spit. I was like, 'No way in hell am I having that at my wedding!'

"We'll compromise and get a chip van at the end of the night."

The couple have decided to tie the knot abroad in mid-May and Rosanna says she's starting to feel the pressure.

"I was so relaxed all year and then last month I thought, 'Oh My God, it's only nine months away. So right now we're thrashing out contracts and meeting with our wedding planner Tara Fay."

The couple will have two wedding celebrations, their nuptials will take place abroad and they will have a party back in Dublin when they return.

Rosanna, who was talking at the launch of Irish Heart Foundation's Fats of Life campaign, says she has been scouring the internet for dresses and wants to go for something unique.

"I would like something different, especially if we are looking at a hotter climate. I would like something a bit lighter and floatier and not a big meringue dress.

"I've started looking for dresses because I don't want to buy one too far ahead and then get sick of looking at it."
