Mums cook up meals idea for busy parents

TWO young mums who were struggling to cook wholesome dinners while juggling newborn babies decided to put their experiences to good use by setting up a new company.

Friends Grace O'Connell (34) and Kerry Legh (31), who live in Galway, came up with the idea for Yum Tree Kitchen after the birth of their first children, Crioadh and Elsie, within months of each other last year.

"While we were pregnant we both planned to eat very well, but we were talking about how so often we would succumb to convenience food.

"When the girls arrived we were full of good intentions but we were so tired," said Grace.

"We both froze some food to have ready but that runs out very quickly and we were just talking about how great it would be to have a service that provides good, healthy food," explained Grace.

After speaking to other new mums who were facing the same problems, the pair, who had both worked in managerial posts, decided to take the plunge and set up their own service .

They roped in Kerry's husband, chef Mark Legh, to prepare the meals for their new venture.

The friends set up kitchens in Spiddal, where they now prepare more than 20 dishes.

These frozen meals can then be delivered to homes around the local area, Galway city and suburbs, via a bi-weekly delivery service. The child-friendly dishes use minimal salt and sugar and all ingredients are sourced locally.
