Easy telly treats are on the ball
You don't need an excuse to throw a party and these tasty dishes are right for a casual meal
WHILE Americans will be huddled around their TV screens eating snacks and drinking beer tomorrow for Superbowl, I felt like sharing some easy crowd-pleasing recipes for the next party you throw at home.
1 > Smoked barbecued Chicken Pizza
Makes 2 pizzas/serves five
Ingredients
>2 tbsp extra virgin olive oil
>3 chicken breasts, cut into strips
>250ml barbecue sauce
>2 8-10 inch par-baked pizza crusts, found at most stores
>150g smoked gouda, shredded
>150g mozzarella, shredded
150g parmesan cheese, shredded
1 red onion, sliced thinly
4 tbsp coriander, finely chopped
Method
>Preheat oven to 200°C/400°F.
> Heat oil in a skillet and saute chicken strips until browned, about 8-10 minutes. Let cool.
>In a bowl take 2 tbsp of barbecue sauce and toss with chicken.
>Place pizza crust on a non-stick sheet, spread with barbecue sauce, leaving a 1/2 inch from the edge without sauce.
>Sprinkle 3 cheeses on top evenly, top with onion and the chicken.
>Bake in the oven for 10-15 minutes or until cheese bubbles.
>Sprinkle with coriander and serve immediately.
2>Sun-dried tomato and garlic Hummus with Toasted Pitas
Makes 10-15 triangles
Ingredients
>1 pack pita bread
>2 tbsp extra virgin olive oil
>salt and pepper
>100ml water
>4 tbsp sun-dried tomatoes, packed in oil
>2 x 15oz cans chickpeas, drained
>4 garlic cloves
>1/2 tsp chilli flakes
>1/2 tsp sea salt
Method
>Preheat oven to 200°C/400°F.
>Brush pita bread with the extra virgin olive oil, sprinkle with salt and pepper. Cut into triangles and place on a non-stick baking sheet.
>Bake for 20-15 minutes or until golden. Set aside and let cool.
>Place other ingredients in a food processor, pulse at first and then blend for 10-15 seconds to mix ingredients until hummus resembles a paste-like texture.
>Serve in a bowl surrounded by the baked triangles.
3>Brownie stack
This is a great simple recipe that can be made the night before the party.
Serves 4
Ingredients
>475ml heavy whipping cream
>2 tbsp powdered sugar
>1-tbsp pure vanilla extract
>8 squares of chocolate brownie bites
Method
>Whisk cream, sugar and vanilla until stiff peaks form.
>Break up the chocolate brownie bite into small pieces.
>Spoon whipped cream into four glasses, top with brownie pieces and repeat using 2 chocolate brownie bites per glass.
>Chill in the fridge before serving.
