To make it feel authentic for them, they're going to have a Norwegian-style meal on Christmas Eve ahead of a traditional Irish Christmas on December 25 -- with a pasta dish thrown in for good measure.
"I'm going to be cooking for 20 people this year, so no pressure there! We're having over loads of relatives, my mum, auntie, my brother and his kids so I don't know what I'm letting myself in for," she explained.
"Kaste and his mum are going to cook on Christmas Eve and they're making something traditionally Norwegian like pork belly, food that's very different to what we would normally have.
"I'm going to cook a turkey with all the trimmings on Christmas Day itself and of course, I have to include some pasta for the Italian theme.
"Then we usually play an Italian card game called Scopa which is great craic as we usually play for money -- not that much, just a few euros but it's really good fun."
This is also going to be her first Yuletide as a mum, having welcomed in her adorable baby Thor last February and she added how it made the festive holiday "extra special" for her and her partner.
"He's still too young to really understand what's really going on but he can pick up on the excitement," she added.
The couple were due to fly over to spend New Year's Eve with her sister Sonya and her new husband Colin Devlin, who tied the knot at the K Club last October.
They were hoping to ring in 2013 with her sibling at her home in California, but they have now decided to put the trip off until next month in a bid to beat the January blues.
Wedding bells are also chiming for Virginia and Kaste after he got down on bended knee and popped the question during a romantic trip to New York last May, surprising her with a proposal while they were in Central Park.
The loved-up pair, who have been dating more than four years, have yet to set a date for the wedding, but have indicated they'll definitely be having it in Italy so she can invite her large circle of Italian friends and relatives to the bash.
