She made quite an impression as one of the contestants on Alan Sugar's BBC version of the hit show as the straight-talking businesswoman.
However it seems she has no intention of taking a trip down memory lane for when a celebrity version hits Irish screens.
"No, I've been there, done that -- I have the T-shirt. It would be different going back I guess because it would be a lot more fun. I had a lot riding on it when I appeared on The Apprentice UK. I had just left my job so I was thinking, 'I really need to win this'.
"But Alan Sugar didn't like me, we didn't hit it off. Luckily, it's worked out well since."
Jennifer (31) also told TV Now that she's looking forward to taking some time off over Christmas and intends to close her Bella Makeover studio for two weeks as she puts her feet up.
She'll be celebrating her first Yuletide as an engaged lady after her other half Lau Zamparelli got down on bended knee and popped the question over the summer.
The discreet pair managed to keep their good news to themselves for nearly eight weeks before the cat was finally let out of the bag during an interview on the Ray D'Arcy show.
And she describes the moment that he asked for her to be his wife as the highlight of 2012. "We were on holiday in Sardinia and he got down on one knee, the whole shebang. I nearly died. I totally wasn't expecting it," she explained.
"I laughed. I was like, 'What are you doing down there?' I was in total shock. It was great. Six years, c'mon -- it's about time. I'm waiting for it a long time."
