Far from turning into an eager Bridezilla following his surprise proposal last month, the Spin FM presenter is taking a laidback approach to things.
And she said she's happy to wait until 2014 to walk down the aisle with Frank, who is a mechanic in the Irish Defence Forces.
"We have no date yet as we are looking at venues at the moment so it's all very exciting," she told the Diary.
"I don't want to rush it as I want to get it perfect.
"We've loads coming from the States and Europe so we want to give everyone a good bit of notice."
There will be a spate of celebrity weddings in Ireland this year. Karen Koster is getting hitched in Italy to John McGuire in June.
Actress Leigh Arnold will also be swapping vows with her beau Steve Davies in August, shortly after she gives birth to their second baby.
Another well-known figure tying the knot is Leinster rugby hero Jonathan Sexton with his long-term girlfriend Laura Priestley.
But Nikki plans to enjoy a long engagement.
She and her other half are not long back from ringing in the New Year with her family in Florida where they had a "fantastic" time.
They spent the time sightseeing and relaxing in the sun as they indulged in some dolphin watching and a cruise.
She and Frank have been dating for nearly two years but she said she was gobsmacked when he decided to get down on bended knee a few weeks ago.
He had been planning the proposal from his base in Lebanon before coming back to Ireland and whisking her off for a romantic weekend.
They checked in to a luxurious suite in the five-star Lough Eske castle in Donegal where he popped the question in the hotel's tower.
He planned the whole proposal while he was stationed in Lebanon, and the brave lad even picked out the diamond sparkler.
Nikki revealed how she "just knew" he was the right man for her from the very start.
"You do know when you meet the right person. It's completely different to any other relationship I've ever had and everything's just easy with him -- he's definitely the one," she said.
