"It feels amazing being surrounded by all these wedding dresses," she said. "It's such a fun day at work. I've been taking photos on my phone and I've sent them on to PJ.
"I've probably given him a heart attack. He only proposed four weeks ago and I'm already picking out the dress," she joked. Despite modelling dresses all day, Sarah has yet to start the search for her dream dress. "I haven't started looking yet but when I do, my twin sister will definitely help me pick out the dress."
Sarah says she wants to follow in fellow model Aoife Cogan's footsteps and go for a more boho look on her wedding day.
"The wedding will be very laid-back. There will be no seating plan. Everyone will be able to do what they want."
One thing is for certain, the couple do not want to tie the knot in Ireland.
"We decided not to have it in Ireland because we want it to be about the food and the wine.
"I have a huge family and if we had it here, it would be a 'ginormous' deal. I want it to be more like a small party than a big extravaganza."
The Liberties' native and the St Pat's football star got engaged in New York over the Christmas holidays. Sarah says she was completely shocked when PJ popped the question.
"I was just blown away when he asked me. I was really, really surprised.
"The first person I rang when he proposed was my mam, of course. He had asked my parents' permission before we went over to the States. He'd deliberately left it quite late so that my mum wouldn't tell me. He knew she'd accidentally let it slip."
And Sarah says she loves being a bride-to-be.
"I'm really enjoying being engaged. This Christmas was all about celebrating and having champagne -- I don't think I've ever had so much champagne in my life," she laughed.
